Texas Cake...a recipe shared by Tucker's Mom, Cathy.


Texas Cake
(Sheet Cake)
Ingredients
FOR THE CAKE:
2 cups Flour
2 cups Sugar
¼ teaspoons Salt
4 Tablespoons (heaping) Cocoa
2 sticks Butter ( you can use 1 stick of butter and ½ cup of canola oil instead of two sticks of butter and it is just as delicious and even more moist- that is the way my mom made it)
1 cup Boiling Water
½ cups Buttermilk
2 whole Beaten Eggs
1 teaspoon Baking Soda
1 teaspoon Vanilla

FOR FROSTING:
½ cups Finely Chopped Pecans
1-¾ stick Butter
4 Tablespoons (heaping) Cocoa
6 Tablespoons Milk
1 teaspoon Vanilla
1 pound (minus 1/2 Cup) Powdered Sugar
Preparation Instructions
In a mixing bowl, combine flour, sugar, and salt.

In a saucepan, melt butter. Add cocoa. Stir together.
Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes. Yes, only 20 minutes.

While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake. Yes, over the warm cake!

My husband just looked at the picture of the cake you put up and wants to know if I can get the Texas cake to look like that one! This is a great sheet cake that my family loves. It is one of those desserts that you have to cut a little piece off every time you pass it.

Oh, Cathy....that's too funny. Who cares what a cake looks like as long as we have one ready to eat it when we are. And you're right, I'll be the one making excuses to walk by just so I can steal another little piece. Sorry I didn't have a sheet cake graphic. If anyone has the recipe to the cake shown, share please. Or better yet, bring it on over!

Oh Mary,

This is so much prettier than a sheet cake, lol. Bill said, call up Mary and see if she can give you THAT recipe. He is a cake snob-thinks it is not a real cake unless it is round- that is until he tasted this one- he loves it too! WE loved the picture- enjoy the cake!
